Cilantro Lemon Vinaigrette

Thought I’d share a quick recipe post.  If you’ve never tried this cilantro lemon vinaigrette I highly recommend you do.  I found this easy recipe on Pinterest (or you can go here).  Just combine all the ingredients in a blender and hit the button. Blend until smooth and store in refrigerator. That’s it. Easy peasy!  Goes great with shrimp tacos or you can use as a salad dressing.  My hubby and kids LOVED it!  Enjoy!

2 handfuls of Cilantro
2 tsp Garlic
1/2 Lemon
1 tsp Honey
1/4 tsp Salt
2 tbsp Champagne or red wine vinegar
1/3 cup Olive oil

One Pot Creamy Garlic Pasta

A few days ago I came across this recipe on Facebook and thought “that’s looks pretty darn good”. So I picked up a few of the ingredients I was lacking and went to work. The recipe is from Favorite Family Recipes and can be found HERE.  I’ve went ahead and listed the ingredients for you anyways. Let me just say this was the best tasting pasta recipe I’ve tried in a long time and it is very easy to make.

  • 1 Tbsp. butter
  • 4-5 cloves of garlic, minced
  • 2 (14oz) cans of chicken broth
  • 2 1/2 cups of milk
  • 2 Tbsp butter
  • 1 lb. pasta noodles – uncooked
  • kosher salt and black pepper to taste
  • 1 tsp. basil (I used the fresh, chopped,  not dried, basil leaves)
  • 2/3 cup parmesan cheese
  • 4 cups broccoli (this can be optional)
  • 2 chicken breasts, grilled (if you can’t grill the chicken you can cut them up in bit size pieces, season with Italian seasoning and sauté in olive oil.

Season the chicken and sauté in olive oil. Once cooked move aside.
Saute the minced garlic in the melted butter
In a large skillet heat butter and add garlic. Cook for about a minute

Add salt and pepper to taste. I misread the instructions and added 1 tsp of salt . It still turned out good.

**Bring it all to a boil then simmer until liquid has evaporated some. You may add more milk if you like to make it more creamy.

Then when it’s all cooked up you can add the cooked chicken and parmesan cheese.IMG_1719IMG_1722

Baked Pesto Chicken

Thought I’d share a super quick and easy recipe I came across on Facebook.  It was originally posted by BuzzFeed Videos and a cousin of mine shared it on her wall and of course I shared it and felt it was my duty to pass this yummy recipe along to all my fellow bloggers.

I don’t even think step by step instructions are needed. The pictures speak for themselves.

Here’s what you’ll need:

4 boneless chicken breasts (you will notice mine were the split chicken breasts with ribs. It was what I had on hand at the moment)

Shredded mozzarella cheese

Pesto Sauce

Roma tomatos (I used regular  because it was all I had)

Bake at 400 degrees for 40 minutes
