Cilantro Lemon Vinaigrette

Thought I’d share a quick recipe post.  If you’ve never tried this cilantro lemon vinaigrette I highly recommend you do.  I found this easy recipe on Pinterest (or you can go here).  Just combine all the ingredients in a blender and hit the button. Blend until smooth and store in refrigerator. That’s it. Easy peasy!  Goes great with shrimp tacos or you can use as a salad dressing.  My hubby and kids LOVED it!  Enjoy!

2 handfuls of Cilantro
2 tsp Garlic
1/2 Lemon
1 tsp Honey
1/4 tsp Salt
2 tbsp Champagne or red wine vinegar
1/3 cup Olive oil

Turkey, Apple & Brie Quesadilla

If you’re looking for a quick easy snack for the kids I found this easy to make quesadilla at Living Well Spending Less.  You get your protein, veggies, and fruit in one shot.   It’s good and just plain easy to make especially when your kids come home hungry and you’re scrambling to try to find something quick to make.  I’d rather my kids eat something that has some nutritional value.   I admit sometimes I get tempted to throw them a bag of chips or cookies.  Don’t get me wrong. I love chips especially tortilla chips with guacamole..(can you say YUMMM!!) and oreo cookies with milk.  I guess if I had my pick, I’d rather go for something on the healthier side.  But hey, if you and your kids love chips and cookies then you can eat them without the guilt if you shop on the healthier side.  For instance, I’ll get a bag of organic low-salt chips from Trader Joes and you can always find a healthier version of oreo cookies here too or at other health food stores like Sprouts.  But this Turkey, Apple & Brie Quesadilla is definitely a great snack to throw together and munch on in between meals or can even take the place of a meal if you prefer to eat light.  You can even serve it up with a side of organic tortilla chips and salsa or guacamole. 🙂  Enjoy!
